Luigi’s restaurant in Dubois, changed the cuisine from traditional Italian, to incorporate the flavors of New Orleans on Tuesday. The Owner, Ed Tate, and his staff were hard at work bringing the flavors of Burbon Street, to Brady Street. Tate says one of his Chefs, Ryan, was working since 3 a.m. on Tuesday morning, to help serve up food that did not start until 12 hours later. 

The Italian restaurant had a cajun inspired buffet to benefit the Dubois Chamber of Commerce scholarship fund. The buffet included Louisiana favorites from Jambalaya, gumbo, and blackened chicken. The flavors of cajun, pepper, and spice were all influenced from the flavors of Mardi Gras right in central Pennsylvania. There will also be a large buffet of hommade desserts. The event started at 4 p.m. and is $25 a person, which includes tax and tip. Just like Mardi Gras the party runs all night. Tate says he will be serving up food until the last people come through the door.
