When your plate is this colorful, you know it’s going to be good.
Omni Bedford Springs Resort and Spa is making it the Summer of Mango.
Production cook Donnie Beattie shared one of their popular dishes, Mango Fish Tacos.
“It’s a house made pickled root vegetable and avocado crema,” he said.
Finished with a slice of mango.
“It just brings a nice freshness, texture to it.”
And you’re going to need a drink to wash this all down.
“We hand picked these drinks, we tested them, and we decided this is what we want and this is kind of how you ended up with your summer of mango beverages,” Beattie said.
These cocktails all pair well with the menu. Like the jerk chicken sandwich. Beverage Director Lamont Rooker suggest The Mango Mule to go with it.
“The spice in the ginger beer kind of cuts through some of the mango, the sweetness of the mango and slaw,” Rooker said.
The Spicy Mango Margarita goes with naything. It’s made with spicy mango syrup.
“If you’re making this at home, you wanna go a half, like one and half on the tequila you wanna go half on the syrup, you got some cointreau,” he said.
Shake it up, add line, and you’ve got yourself a Spicy Mango Margarita to with your mango-licious meal.
