Vegetable Spring Rolls with Spiced Cider Dressing

Spring rolls:

8 rice wraps

1 raw beet, skin removed and finely grated

1/2 pound asparagus bottoms trimmed

1 1/2 cup carrots, thinly sliced

1 1/2 cup green cabbage shredded thin

1 bunch green onions trimmed

1 bunch radishes sliced

Salt and pepper to taste

*substigute for any fresh veggies available

1 small bunch chervil and/or mint leaves sliced thin.

Prep veggies and herbs and set aside for easy assembly. For the beets, use a mandolin on a thin setting.

Warm Water Bath: Select a bowl that is large enough to submerge your sheet of rice paper into the liquid without needing to bend it. Fill that bowl with 1-2″ of warm water and a few dashes of soy sauce, a 1/4 teaspoon of minced garlic and lime juice into the water.

Once wet, transfer to a clean, slightly damp surface (a wooden cutting board works nice), and lay out flat keeping the circle shape.

Add a portion of each of the prepped ingrdients (and any other desired fillings) and a bit of salt and pepper. When rice paper is flexable (after a few seconds of getting wet) fold bottom over the fillings, then gently roll over once and fold in the side to seal, then roll until completely sealed. Keep rice paper tight by scrunching vegetables together tight without stretching a hole in rice paper. Place on a serving plate and top with a room temperature damp towel to keep fresh.

Repeat process until all toppings are used – about 7 or 8. When ready to serve cut though the middle to make two halves and plate and serve.

Spiced Cider Dressing:

1 cup hard cider reduced to 1/2 cup

1/4 cup rice wine vinegar

1 Teaspoon spicy mustard

 3 Tablespoons Honey

Pinch paprika

Salt and pepper to taste

Chives finely chopped

Whisk all the ingredients together in a bowl and pour into portion cups.  Dip spring rolls into portion cup and enjoy.

You can use any combination of vegetables you want. You can also add any protein you would like for example shredded chicken or shrimp. You can also add beans and grains too.
