Sugar Glazed Pumpkin Cookies
For Cookies:
2 C Flour
½ t Salt
1 t Baking Powder
1 t Baking Soda
1 t Cinnamon
1 C Shortening
1 C Sugar
1 C Pumpkin Puree
1 Egg
1 t Vanilla
½ C raisins
Glaze
½ C Brown Sugar
3 T Butter
4 T Milk
1 t Vanilla
1 C Powder Sugar
Glaze:
In a small sauce pan mix brown sugar, butter and milk together. Simmer over low heat for 5 minutes, Allow to cool. Add vanilla and powder sugar. Blend well until the mixture becomes smooth glaze.
Cookies:
Combine flour, salt, baking powder, baking soda, and cinnamon in a mixing bowl and stir.
Using a mixer, cream shortening and sugar. Add pumpkin, egg and vanilla to shortening and mix 1 minute. Add the dry ingredients and raisings.
Place teaspoon size scoops on to parchment lined baking tray 2 inches apart. Bake at 350 degrees for 10-15 minutes. Remove from tray, allow to cool and glaze. Allow glaze to set and enjoy.
