Pumpkin Goulash
Ingredients
1 medium sized pumpkin
3 C long grain rice
3 C cidere
1 Lg onion medium diced
½ stock celery medium diced
1 ½ lbs. ground beef
1 ½ lbs. redskin potatoes
Sauté onion
Celery
Ground Beef
Method
Mix in rice and potatoes. May need extra cider (1-2 cups). Bake until pumpkin flesh is tender. As your guests take the goulash they scrape off some pumpkin as well. Add in at the ingredients to season with pumpkin spice and salt and pepper garlic.
