Chef Terry Wallace from U.S. Hotel Tavern shares a recipe for Pennsylvania Dutch Chili.

Pennsylvania Dutch Chili with Redskin Mashed Potatoes

2 lbs. Ground Beef

1 large onion (medium diced)

1 large cans chopped tomatoes in puree

2 large cans dark red kidney beans

1 large can light red kidney beans

3 tablespoons chopped garlic

1/4 cup sugar

4 jalepeno’s (Large diced with seeds)

Procedure

Saute onions til al dente – slightly translucent

Add in fresh ground beef, continue sauteeing

Til browned slightly and small pieces are rendered

Add in chopped garlic and jalapeno

Put to larger pot and add in chopped tomatoes and kidney beans

Add 1 gallon water and simmer til rich and thickened and sugar added

Serve over potatoes or rice pilaf.
