The March of Dimes Signature Chef Auction is set for Monday, November 20 from 5:00 pm until 8:15 pm at the Blair County Convention Center in Altoona. This event will feature 20 of Central Pennsylvania’s premier restaurants and chefs who will present their signature dishes during a reception. Chef Zach Ford from U.S. Hotel Tavern in Hollidaysburg shares his recipe for Seared Strip Steak, butternut squash butter, pancetta brussel sprouts, and fingerling potatoes.

Seared Strip Steak, butternut squash butter, pancetta brussel sprouts, fingerling potatoes.

Strip steak

1, 10 oz. Serving

Kosher salt

Black pepper

Fennel seed ground

Season both sides of strip with spice mix. Sear 3-5 minutes per side to achieve medium rare doneness.

Butternut squash butter

4 oz roasted pureed butternut squash

2oz unsalted butter

1 tbsp bourbon

1tbsp brown sugar

Soften butter add remaining ingredients whisk until Incorporated.

Sprouts

2 oz. Shaved Brussels sprouts

1 oz. Sliced pancetta

 ½ tsp Olive oil

Salt and pepper to taste

Fingerling potatoes

6 potatoes cut lenthwise

Tsp Olive oil

Salt and pepper to taste

1 tsp minced Rosemary

Roast 400 degree Fahrenheit oven 20-25 minutes until tender.
