The March of Dimes Signature Chef Auction is set for Monday, November 20 from 5:00 pm until 8:15 pm at the Blair County Convention Center in Altoona. This event will feature 20 of Central Pennsylvania’s premier restaurants and chefs who will present their signature dishes during a reception. Chef Nick Letzo from 10/09 Kitchen in Bedford shares his recipe for Butternut Squash Bisque

10/09 kitchen – Chef Nick’s Butternut Squash Bisque

1 medium onion – chopped

2 stalks celery – chopped

2 medium carrots – chopped

3 TBS butter

2 tsp chopped garlic

2 tsp chopped shallot

½ cup white wine

2 quarts apple juice

1 quart pureed butternut squash

3 cups of heavy cream

2 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp allspice

Salt & Pepper to taste

Melt butter in a large pot and sauté butter, shallots, garlic, onion, celery, and carrots until soft. 

Deglaze pan with wine, add apple juice and butternut squash puree.

Cook for 5 minutes

Add heavy cream and cook on low heat for 35-40 minutes

Add spices at the end of cooking

Blend all ingredients in a blender until smooth.  Salt & pepper to taste
