Stuffed Green Pepper Soup

Here’s an old family favorite at our house!  Perfect for a chilly winter day

Ingredients:

1 pound lean ground beef

1 small chopped onion

3 large green peppers chopped

1 can diced tomatoes

1 cup uncooked rice

1 TBS brown sugar

1 10 1/2 can beef broth

1 Tbs Worcestershire Sauce

1 tsp. basil

2 cloves garlic minced

1 1/2 cups water

Salt and pepper to taste

Brown onions and ground beef in a stockpot.   Add rest of ingredients and cook for several hours.

I just got an electric pressure cooker and love it. You can brown the beef and onion right in the cooker and then dump everything else in. Then you have the option of cooking it on slow cook like a crockpot, or pressure cooking. Here is a link to a recipe for how to make the pressure cooker way.

Another nice feature is that the lid locks in the pressure cooker mode so if you are making it for an event and traveling, you will be less likely to spill and it will help keep the food warm.

Serve with crusty bread and salad.
