Squash and Pepper Veggie Hash
I love one-pan side dishes that pair well with any protein. From sautéed shrimp, a juicy steak or grilled chicken, this hash certainly fits the bill. Not a fan of peppers? Swap those out for mushrooms or broccoli. No butternut squash on hand? Substitute with sweet potato or fingerlings. The cook times may differ slightly but feel free to experiment to please the taste buds of your family!
Total Time: 25 minutes
Serves: 4, about 1 cup per serving
Ingredients
2 tablespoons olive oil
2 pounds butternut squash, cut into ½ inch cubes (about ½ a large squash)
Salt and black pepper to season
3-4 cloves garlic, minced
1 medium onion, roughly chopped
1 large bell pepper, preferably red, yellow or orange, roughly chopped
4 scallions, chopped
Directions
Preheat a large skillet to medium heat. Add 1 tablespoon olive oil, butternut squash and season with salt and black pepper. Sauté for 8-10 minutes or until squash is soft, stirring occasionally. Be sure not to overcrowd the pan, as you want the squash to caramelize and cook evenly. Remove squash from the pan and cover with foil to keep warm. Add the remaining tablespoon of olive oil to the pan. Add the garlic, onions and bell pepper and cook until soft, about 4-5 minutes. Add the squash back to the pan, season with additional salt and black pepper. Remove from heat, stir in the scallions and serve hot.
