Lauren K’s Made Over Mustard Chicken
As part of my Recipe Makeover Contest, I made over Mustard Chicken submitted by Annette McQuown of Punxatawney, PA. This meal taste great over either the cauliflower rice featured below or instant brown rice.
Serves 4
Total Time: 30 minutes
Ingredients
24 ounces chicken breast
Salt and pepper to season
1 tablespoon olive oil
3 cloves of garlic, minced
2 tablespoons butter, divided
¼ cup yellow mustard
¼ cup olive oil mayonnaise
¼ cup cider vinegar
1 tablespoon of honey
1 large head of cauliflower, cut into 1 inch pieces
Directions
Cut up chicken breast into bite sized pieces, season with salt and pepper and set aside. Cook minced garlic in olive oil for 30 seconds. Add 1 tablespoon butter to melt, add the chicken to the pan and cook until no longer pink in the middle. In a small mixing bowl, whisk together the mustard, olive oil mayonnaise, vinegar and honey. Pour the sauce over the cooked chicken and cook over low heat for 15 minutes.
In a microwave safe bowl with a lid, place all of the cauliflower pieces and 1 tablespoon of water. Cover and cook on high for 4 minutes. Just before the chicken is finished, place the cauliflower in the base of a food processor. Pulse 10 times. Open the lid and use a spoon to mix the cauliflower around. Replace the lid and pulse 10 more times. Pour into a serving bowl. Stir in remaining tablespoon of butter and season with salt and pepper.
Serve the chicken over the cauliflower rice!

Mustard Chicken: Original Recipe from Annette McQuown of Punxatawney, PA
Serves 4
Ingredients
3-4 chicken breasts
¼ cup butter
4 tablespoons mustard
4 tablespoons mayonnaise
4 tablespoons vinegar
1 tablespoon of sugar, or more to taste
Two 3.5 ounce bags of Success 10 minute white rice
Directions
Cut up chicken breast into bite sized pieces. Put in a pan of butter and cook until chicken is fully cooked. Place the mustard, mayonnaise, vinegar and sugar in a mixing bowl. Pour over the chicken and cook over low heat for 15 minutes. Pour over rice and serve.
