Lauren K’s Chicken Parmesan

Prep Time: 10 minutes

Bake Time: 20 minutes

Serves 8

Ingredients

*Foil and cooking spray for easy clean up

8 thin-cut chicken breasts, about 2 pounds total

Salt and pepper to season

¾ cup light pasta sauce, such as Prego Light Smart

½ cup Italian blend cheese, shredded

½ cup parmesan cheese, grated

2 teaspoons dried Italian seasoning

Directions

Preheat oven to 375 degrees. Cover a large cookie sheet with foil and coat with cooking spray. Lay out chicken breasts on the foil. Season with salt and pepper, flip and repeat on the second side. Spread the pasta sauce evenly over the surface of the chicken. Sprinkle with Italian blend cheese, parmesan and Italian seasoning. Bake for 20 minutes or until juices are running clear and chicken is fully cooked. Serve with a side salad or your favorite pasta.
