Cranberry-Orange Mini Scones

Serving:           16 small scones

Ingredients

Zest and juice (1/4 cup) of 1 orange

1/2 cup half and half cream, plus more for brushing

1 egg

1 cup whole wheat flour

1 ½ cup all-purpose flour, plus more for dusting

1/2 cup sugar

2 ½ teaspoons baking powder

½ teaspoon salt

6 tablespoons unsalted butter, cold and cut into small squares

2/3 cup sweetened dried cranberries

1 tablespoon raw, coarse sugar, optional

Directions

Preheat oven to 375 degrees and line a large baking sheet with parchment paper. Zest the orange onto a cutting board and then squeeze the orange juice into a liquid measuring cup. Leave the orange juice in the cup and pour in the half and half to equal ¾ cup total liquid. Add the zest and 1 egg to the cup and beat the liquid together with a fork. Set aside.

In a medium mixing bowl, combine the whole wheat flour, all-purpose flour, sugar, baking powder and salt. Stir to combine. Cut the butter into the mix with a pastry blender or two knives until the butter is pea-sized. Stir in the cranberries. Last, stir in the liquid ingredients from the measuring cup with a sturdy spoon. Separate the dough into two equal sized balls.

Flour a clean counter surface and place the balls of dough onto the flour and pat into two, flat 6-inch disks. Cut each disk into 8 triangles, as if you’re cutting a pie. Place each scone onto the baking sheet, about 1 inch apart. Brush scones with half and half and then sprinkle with raw sugar. Bake for 17-18 minutes or until golden brown on top. Serve with your favorite hot beverage!
