Burgers with Caramelized Onions, Gouda and Bacon
Total Time: 30 minutes
Serves 8
Ingredients
1 tablespoon olive oil
2 medium onions, sliced thin
1 teaspoon sugar
1 tablespoon balsamic vinegar or apple juice
12 slices bacon, cooked
2 pounds lean ground beef, preferably the 93/7 fat ratio
Salt and black pepper to season
8 slices Gouda cheese
8 potato-style or whole wheat burger buns
Directions
In a large skillet, heat olive oil over medium low heat. Add the onions, sugar and vinegar. Cook onions until caramel in colored and soft, about 20 minutes. Meanwhile, cook bacon until crisp and place on a plate lined with a paper towel to absorb grease. Break the beef up into 8 flat patties, making the center of the patties slightly thinner than the outside edges. Season both sides with salt and black pepper. Grill or pan fry burgers on the first side for 4 minutes. Flip and add a slice of cheese to each burger. Cook an additional 2-3 minutes or until desired doneness is reached. Place burgers on the bottom half of the potato rolls. Distribute the onions and bacon between the sandwiches, add bun tops and serve immediately.
