Apricot Peach Compote

My high school teacher, Mrs. Linda Shrader, treated my sister and me to Sunday brunch at Crazy Alice’s Cafe in Somerset, Pennsylvania a few years ago. On their buffet, they served homemade ginger peach apricot compote as a topper for their wheat berry French toast. It was hot, sweet and oh so delicious! I couldn’t wait to get home and recreate that wonderful fruit delight. Thank you Crazy Alice for inspiring a healthy, but sweet breakfast treat.

Total Time: 20 minutes

Servings: 10, ¼ cup per serving

Total Cost: $5.34

Ingredients

2 cups peaches, peeled and cubed (about 3 large peaches)

1 cup apricots, cubed (about 4 large apricots)

1/3 cup orange marmalade

1/3 cup water

2 tablespoons honey

1 teaspoon pumpkin pie spice

Directions

Combine all ingredients in a medium saucepan. Bring to a boil and then turn the heat down and simmer for 10 minutes, stirring occasionally. Serve hot or cool completely and store in an airtight container for up to 1 week. To use, simply reheat the portion you desire.

How to use your compote:

·         Spoon it over pancakes, French toast or waffles in place of syrup

·         Use it as the fruit layer for a yogurt parfait

·         Stir into piping hot oatmeal

·         Heat and drizzle over ice cream

·         Spread onto toast as a fruit spread

·         Simmer with pork chops for a sweet sauce

·         Spoon over brie cheese and sliced prosciutto for a sweet and savory crostini
