How to Spatchcock and Bake a Turkey

Instructions:

Remove giblets and neck from cavity

Rinse turkey inside and out with cold water

Spatchcock turkey by removing backbone and pushing on breast side to break breast plate so the turkey lays flat

Pat dry

Rub turkey with your favorite herbs, seasonings, salt and pepper

Support the bird underneath in the roasting pan with a rack or with apples, carrots, onions and/or lemons to create space for the drippings

For baking:

Bake approximately 10 minutes per pound of meat

At 425 degrees bake turkey for 30 minutes to seal in the juices, then drop the temperature to 350 or 375 for the remainder of the roasting time 

Use a meat thermometer to ensure that the thigh meat reaches an internal temperature of 160 degrees

*Roasting times will vary due to oven type, oven temperature and temperature of turkey before roasting, type of pan you are using, how cold your turkey was when you put it in the oven, how many times you opened the oven while cooking and what else you are cooking in the oven along with the bird 

Allow turkey to stand for 15 to 20 minutes to allow juices to redistribute before carving
