Stacey German from Catered Affairs in Altoona shares a recipe for Cranberry Chicken Salad Croissant Sandwich.

The recipe is as follows:

3 cooked and chopped Chicken Breasts

2/3 cup chopped celery

1/3 cup sweet onion

1/2 cup dried cranberries

1/2 cup mayonnaise

2 tbsp fresh squeezed lemon juice Salt and pepper to taste

 In a large bowl combine chicken, celery, onion, cranberries.

In a small bowl whisk together mayonnaise, lemon juice, salt and pepper.

Pour the dressing over the chicken mixture and stir well to coat.

Refrigerate for 2 hours before servings to allow flavors to meld together and the cranberries to plump up. The longer you refrigerate before serving the better!
