Simple Sausage and Veggie Skillet

Total Time: 30 minutes

Serves 4 

Ingredients

2 tablespoons olive oil, divided

5 cloves garlic, minced

1 large onion, chopped

1 pound turkey sausage, removed from casings

2 large bell peppers, sliced

8 ounces sliced baby portabella or cremini mushrooms

8 ounces sugar snap peas

Salt and black pepper to season

2 tablespoons low-sodium soy sauce

1 tablespoon honey

Directions

Heat 1 tablespoon olive oil in large skillet over medium heat. Add garlic and onions and sauté until translucent, about 3 minutes. Add the turkey sausage in pieces, continuing to break up the meat into bite-sized pieces. Brown the sausage until it is longer pink in the middle. Remove mixture from the skillet into a separate bowl and keep warm. Add the remaining 1 tablespoon of olive oil to the pan. Stir in the bell peppers and mushrooms and sauté for 3 minutes. Add the snap peas and season with salt and black pepper. Cook an additional 2 minutes. Add the soy sauce and honey and stir to coat. Add the cooked sausage mixture back into the pan and bring to a simmer. Cook for an additional 2 minutes to thicken the sauce. Remove from heat and serve immediately.
