You buy the pasta, they’ll donate the money! Fasta & Ravioli Co. is teaming up with the Schlow Centre Region Library and the Centre County Library to promote National Library Week.

National Library Week runs from April 9th through the 15th. The week celebrates the contributions of our nation’s libraries and librarians, and promotes library use and support. During National Library Week, Fasta & Ravioli Co. will donate one dollar for each pound of fresh pasta sold that week to the Centre County Library, the Schlow Centre Region Library, and the Dauphin County Library System.

To kick things off, Chef Jeremiah McClenahan from Fasta & Ravioli Co. shares his recipe for Asparagus, Sun-dried Tomato, and Chicken with Tomato Basil Fettuccine.

Asparagus, Sun-dried Tomato, and Chicken with Tomato Basil Fettuccine

16 oz Fasta & Ravioli Co. Tomato Basil Fettuccine

1 tbsp extra virgin olive oil

1 lb boneless, skinless chicken breast, diced

2 cloves garlic, minced

1 bunch asparagus, trimmed

1/2 c. sun-dried tomatoes, roughly chopped

1/4 c. chicken broth

1/2 c. heavy cream

salt

black pepper

1. Cook Fasta & Ravioli Co. Tomato Basil Fettuccine in a large pot of salted boiling water until al dente. Drain and return to pot

2. While pasta cooks, heat oil in a large skillet. Add diced chicken and season with salt and pepper. Cook five minutes or until no longer pink.

3. Add asparagus and sun-dried tomatoes and cook eight minutes or until asparagus is tender. Add garlic and cook one minute more

4. Add chicken broth and heavy cream to pan, bring to a simmer. Add fettuccine and toss until fully coated
