Check out Chef Jeremiah McClenahan from Fasta & Ravioli Co. this Friday as part of the Celebrity Farm-to-Table at the Centre County Grange Fair!

Jeremiah will be on the Southside Stage at the Centre County Grange Fair in Centre Hall on Friday, August 18 at 10:00 am. Today, he’s sharing his recipe for New Orleans Voo Doo Ravioli with a Andoulie Sausage and Corn Maque Choux.

New Orleans Vodoo Ravioli with a Andouile Sausage and Corn Maque Choux

1/2# Andouile Sausage, small diced

1 Onion, Small Diced

2 Red Peppers, Small Diced

2 Ears Corn, Removed from Cob

2 Cloves Garlic, Minced

1 Cup Heavy Cream

1/4 Cup White Wine

2 Tbsp Butter

Chives for Garnish

1 Bag Fasta and Ravioli Company New Orleans Vodoo Raviolis

1. Heat saute pan on medium high heat

2. Add butter, onions, peppers, corn, sausage and saute for 3 to 4 minutes.

3. Add garlic, saute 2 minutes then deglaze with white wine and let wine almost evoperated.

4. Cook ravioli to package instructions.

5. Add cream and let reduce for 4 mins.

6. Arrange ravioli on plate then cover with the Maque Choux

7. Garnish with Chives and enjoy
