Atomic Pepperoni Roll

Prep Time: 20 minutes

Bake Time: 25 minutes

Serves: 8

Ingredients

1 tablespoon olive oil

2 cubanelle peppers, sliced

1 banana pepper, sliced

1 small onion, chopped

1 tablespoon Italian seasoning

1 pound premade pizza dough

20 slices deli pepperoni

1 cup shredded smoked provolone, divided

1 egg, beaten

Tomato sauce for serving if desired

 

Directions

Preheat oven to 350 degrees. In a large skillet, heat olive oil over medium heat. Add sliced peppers and onions and sauté until soft, about 5-7 minutes. Stir occasionally. Remove from heat to cool slightly.

On a large rimmed baking sheet, spread out the pizza dough. Sprinkle with the Italian seasoning. Spread half of the cheese down the center of the dough and then top with pepperoni slices. Spread the cooked peppers and onions over the pepperoni and then top with the remaining cheese. Fold each side of the dough over the center horizontally. Cut 3 holes to vent and brush with beaten egg. Bake 25 minutes or until golden brown. Rest for 5 minutes, slice and serve warm with tomato sauce if desired.
