Lauren K shares her recipe for Peanut Butter Cup Cookies in her LAST regularly scheduled Central PA Live appearance!

Peanut Butter Cup Cookies              

Bake Time: 10-12 minutes per batch

Servings: 48 cookies

Ingredients

3 cups all-purpose flour

1 ½ teaspoons baking soda

1 teaspoon salt

1 cup butter, room temperature

1 cup smooth peanut butter

1 cup granulated sugar

1 cup brown sugar

2 eggs

1 teaspoon vanilla

1 bag mini peanut butter cups, unwrapped

 

Directions

Preheat oven to 375 degrees. Spray mini muffin tin pans with cooking spray. In a medium bowl, stir together the flour, baking soda and salt. Set aside. In a large mixing bowl, cream butter, peanut butter and the sugars together until smooth and fluffy. Add the eggs and vanilla and beat again. Add the flour mixture in to the creamed butter mixture on the lowest speed of the mixer or by hand until well combined. *You can refrigerate the dough for up to 2 days at the point if desired.

Roll dough into 1-inch balls and place in mini muffin pans. Bake for 10-12 minutes or until golden on top. Remove from oven and immediately press a peanut butter cup into each cookie. Cool for 5 minutes in the pan. Carefully remove cookies and place on a wire rack to cool completely before storing.

Variations for Your Peanut Butter Dough!

•          Simple Peanut Butter Cookies: roll into 1-inch balls and press dough out slightly in a crisscross pattern with a fork. Bake for 8-10 minutes on a cookie sheet.

•          Snickers-Filled Cookies: Freeze unwrapped mini Snickers candies for 1 hour. Then, wrap the candies completely with the dough. Place on a cookie sheet and bake 10-12 minutes.

•          Peanut Butter M&M Cookies: Stir in one 11-ounce bag of holiday M&Ms into the peanut butter dough. Place 1-inch balls of dough on a cookie sheet and bake 8-10 minutes.

•          Peanut Butter Blossom Cookies: Roll out the dough into 1-inch balls. Place on a cookie sheet and bake 8-10 minutes. Remove pan from oven and immediately press an unwrapped Hershey kiss into the center of each baked cookie. Let cool a few minutes before removing to a wire rack to cool completely.
