Feel the Heat of Chili & Soup this weekend in Downtown Bedford!

The Feel the Heat Chili & Soup Tastings is scheduled for Saturday, January 20 from 11:00 am until 2:00 pm at Downtown Bedford, Inc. in Bedford. Vote on your favorite and turn in your ballot for a chance to win $50. The First 200 to purchase tickets will receive a “Too Hot to Handle” goodie bag.

Stefano Ferrari, co-owner of LIFeSTYLE in Bedford, shares his recipe for Cream of Zucchini.

CREAM OF ZUCCHINI

 

–           2 Tablespoon butter

–           6 cups zucchini, sliced

–           1 onion, sliced

–           1 garlic clove, crushed

–           2 ¼ cups chicken broth

–           2 ¼ cups milk

–           Salt and pepper

 

Melt the butter in a pan, add the zucchini, onion and garlic and cook over low heat for 15 minutes. Pour in the stock and cook for 15 minutes more. Transfer to a food processor to a puree, then pour into a pan. Heat the milk to simmering point in another pan, then stir into the puree and season with salt and pepper to taste. Reheat to simmering point, pour into a soup bowl and serve with a dash of your favorite finishing EVOO.
