Chef Terry Wallace from U.S. Hotel Tavern shares a recipe for Josephine’s Waffles.

Josephine’s Waffles

2 cups – Flour

salt and pepper to taste

5 tsp. – baking powder

4 T – sugar

2 cups – milk

4 T – oil

2 egg whites (stiffly beaten)

2 egg yolks

Directions

Mix all dry ingredients together. Mix egg yolks with enough milk to make one cup and mix well. Then add to the flour mixture and the rest of the milk, mix well. Add oil. Last fold in the egg whites.bake at high temp. on waffle iron. Spray butter on both side of waffle iron. Bake in waffle iron until golden brown.
